Aquaponics: Cultivating the Future of Our Tables

In this presentation, Diego Gallegos, the renowned “caviar chef” known for his sustainable approach to gastronomy, and Juan Antonio López, President of Aula del Mar in Málaga, will discuss integrated aquaponics in gastronomy. This is an example of integrated agro-aquaculture, a cultivation system that combines aquaculture (fish farming) and hydroponics (soil-less plant cultivation) in a single system where water is constantly recirculated between aquaculture tanks and hydroponic growing beds. It is undoubtedly a globally recognized example of sustainable cuisine.
